BEST WAY TO EXTRACT 5.1 FROM A VOB

I have all my fanedits ready to be made, all the ideas are in place just getting used to the programs, i'm starting slow, first of all, what is the best way to extract a single channel, for example the center for dialogue, into i'm not sure, maybe into mp3, i suppose that could be the easiest way. I was was fiddling with my Campfire tales vob in vegas, when i notcied how great the whole scene sounded with just the loud ambient rushling of leaves in the background along with nice loud clear dialogue, without the gimp on the radio, much more sinister. Also if anyone could tell, when they finally make the movie is it anything like the original master or am i hoping to high, also do you guys just use stereo mixes in your work or go hardcore & stick in 5.1
